Mediterranean Rice with Sun Dried Tomatoes and Pine Nuts

Ingredients to serve:

This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 4 cup uncooked Hinode rice (any variety)

  • 4 tbsp Olive Oil

  • 2 cup Sun Dried Tomatoes

  • 2 cup Black Olives (drained)

  • ½ cup Pine Nuts

  • 2 Lemon (zest and juice)

  • ½ cup Parsley (coarsely chopped)

  • Salt and Pepper to Taste

Method

  • Prepare Hinode rice per package instructions.

  • Heat olive oil in non-stick pan on low heat.

  • Add olives, sun dried tomatoes, pine nuts and lemon zest. Cook for 2 minutes until pine nuts are golden.

  • Pour in the lemon juice cook for an additional 2 minutes.

  • Add rice and parsley to pan stir and serve.
