Barbecued Soy and Honey Kebabs with Rice

Ingredients to serve:

This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 4 cup Hinode Rice (any variety) (uncooked)

  • 2 lb Combined Calamari (uncooked peeled prawns, fresh salmon)

  • 4 cup Fruit and Vegetables: Zucchini, Bell Pepper, Tomatoes, Pineapple (chopped)

  • 1½ cup Soy and Honey Marinade

  • 8 cup Water or Stock

  • 8 Green Shallots (chopped)

  • 2 Lemon Rind (optional)

  • Cracked pepper

Method

  • Cut calamari into strips and dice fresh salmon into squares.

  • Thread seafood, vegetables and fruit alternately onto 12 skewers.

  • Put in dish and pour over marinade. Leave to marinate while preparing rice.

  • Prepare Hinode rice rice per package instructions. Remove from heat, stir in shallots and lemon zest (optional), and stand, covered, while cooking kebabs.

  • Barbecue or grill skewers on medium high, 3-4 minutes each side or until cooked.

  • Sprinkle with cracked pepper and serve with rice.
