4 cup Hinode Rice (any variety) (uncooked)
2 lb Combined Calamari (uncooked peeled prawns, fresh salmon)
4 cup Fruit and Vegetables: Zucchini, Bell Pepper, Tomatoes, Pineapple (chopped)
1½ cup Soy and Honey Marinade
8 cup Water or Stock
8 Green Shallots (chopped)
2 Lemon Rind (optional)
Cracked pepper
Cut calamari into strips and dice fresh salmon into squares.
Thread seafood, vegetables and fruit alternately onto 12 skewers.
Put in dish and pour over marinade. Leave to marinate while preparing rice.
Prepare Hinode rice rice per package instructions. Remove from heat, stir in shallots and lemon zest (optional), and stand, covered, while cooking kebabs.
Barbecue or grill skewers on medium high, 3-4 minutes each side or until cooked.
Sprinkle with cracked pepper and serve with rice.
