4 cup uncooked Hinode Basmati Rice
6 tbsp Vegetable Oil
2 tsp Cumin
10 cloves
2 cinnamon stick
½ cup Vegetable Stock
1 cup Green Bell Pepper (chopped)
1 cup carrot (slivered)
1 cup frozen peas
1 cup sweet corn
1 cup cashews or peanuts
1 cup Cilantro (chopped)
Prepare Hinode rice per package instructions.
Sauté cumin, cloves and cinnamon in oil on medium heat for 1 minute.
Add vegetable stock, bell pepper, peas, carrot, corn and nuts; simmer until tender.
Add rice and sauté all ingredients together until cooked through, then remove cinnamon stick.
Garnish with cilantro and season with salt and paprika to taste.
