Broccoli and Chickpea Curry with Rice

  • 4 cup Hinode Brown Rice (90 Second, Medium Grain or Long Grain)

  • 4 tsp Vegetable Oil

  • 2 onion (finely chopped)

  • 4 tbsp Curry paste

  • 2 can Diced Tomatoes

  • cup vegetable broth

  • 2 head Broccoli (medium size, cut into florets)

  • 2 can garbanzo beans (drained and rinsed)

  • Salt and Pepper to Taste

  • 1 bunch Cilantro (chopped)

  • 1 cup Plain Yogurt

The nutritious bran layer of brown rice is not removed at milling, giving brown rice its nutty flavor and firmer texture.

Method

  • Prepare Hinode rice per package instructions.

  • Heat oil over medium heat in a sauce pan. Add onion and cook gently until opaque.

  • Add curry paste; stir while cooking for 2 minutes.

  • Add tomatoes and broth; simmer for 5 minutes.

  • Add broccoli and garbanzo beans; simmer until broccoli is just cooked.

  • Season with salt and pepper.

  • Mix together cilantro and yogurt in a bowl.

  • Serve curry with yogurt mixture over rice.
