Cantonese Fried Rice

Ingredients to serve:

This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 4 cup Hinode Medium Grain White or Brown Rice

  • 4 tbsp Oil

  • 4 Eggs (lightly beaten)

  • 2 lb Chicken (chopped)

  • 6 cup chicken broth or water

  • 2 tsp crushed garlic and grated ginger

  • 8 cup combined chopped vegetables: snow peas, celery, carrots, beans and onion

  • 2 cup baby prawns (cooked and peeled)

  • 2 cup bean sprouts (tails trimmed)

  • ⅔ cup black bean sauce or soy sauce

Method

  • Heat 2 teaspoons of oil in frying pan over medium heat. Pour in thin layer of eggs and cook.

  • Remove egg, roll into omelet and thinly slice.

  • Heat remaining oil over medium-high heat and cook chicken thoroughly.

  • Add uncooked rice, broth, garlic and ginger and bring to a boil. Turn heat to lowest setting and simmer, covered, for 15 minutes.

  • Combine remaining ingredients and simmer until tender (about 5 minutes).

  • Garnish with egg strips and serve.
