Chicken and Rice Laksa

Ingredients to serve:

This recipe was originally designed for 2 people. Amended serving sizes for 1, 4, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 2 cup Hinode Rice (any variety) (cooked)

  • 3 tbsp Laksa Paste

  • 1 cup Chicken Stock

  • 1 oz can Coconut Milk

  • ½ lb Chicken (thinly sliced, 1 breast)

  • 1 Red Bell Pepper (sliced)

  • 2 oz Baby Corn

  • 2 oz Snow Peas

  • One Lime

  • Cilantro Leaves (chopped)

Method

  • Prepare Hinode rice per package instructions.

  • Combine laksa paste, stock and coconut milk. Bring to a boil over medium heat.

  • Add the chicken, red bell pepper, corn and snow peas to pan.

  • Simmer for 3 minutes until the chicken has cooked through.

  • Add the lime juice and cilantro.

  • Serve over hot rice.
