2 cup Hinode Rice (any variety) (cooked)
3 tbsp Laksa Paste
1 cup Chicken Stock
1 oz can Coconut Milk
½ lb Chicken (thinly sliced, 1 breast)
1 Red Bell Pepper (sliced)
2 oz Baby Corn
2 oz Snow Peas
One Lime
Cilantro Leaves (chopped)
Prepare Hinode rice per package instructions.
Combine laksa paste, stock and coconut milk. Bring to a boil over medium heat.
Add the chicken, red bell pepper, corn and snow peas to pan.
Simmer for 3 minutes until the chicken has cooked through.
Add the lime juice and cilantro.
Serve over hot rice.
