Coconut Rice with Mango

This recipe was originally designed for 6 people. Amended serving sizes for 1, 2, 4, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 9 cup Hinode White Rice, any variety (uncooked)

  • 6 cup Coconut Milk

  • 9 tbsp Crushed Palm Sugar or Soft Brown Sugar

  • pinch Salt

  • 6 Mangos (peeled and diced)

Method

  • Mix together rice, coconut milk, sugar and salt in a saucepan.

  • Bring mixture to a boil, reduce heat to low, cover and simmer for 20 minutes or until rice is tender and liquid is absorbed.

  • Spoon into serving dishes and top with diced mango.
