Easy Chicken and Vegetable Fried Rice

Ingredients to serve:

This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 4 cup uncooked Hinode White & Wild Blend

  • 3 lb chicken breast (cubed)

  • 4 tbsp Vegetable Oil

  • 2 tbsp Sesame Oil

  • 2 tsp garlic (crushed)

  • 4 tsp Ginger (crushed)

  • 4 Eggs

  • 2 cup Green Onions (sliced)

  • 10 tbsp Soy Sauce

Method

  • Prepare Hinode rice per package instructions

  • Heat vegetable oil in a non stick pan.

  • Add chicken, fry gently for a minute.

  • Add ginger and garlic and stir fry until cooked.

  • Crack the eggs into a small bowl and whisk lightly with a fork.

  • Remove chicken from pan add sesame oil, heat then add egg mix and stir fry quickly, add chicken back into the pan.

  • Add rice and stir fry until rice is hot.

  • Add soy sauce and green onions and heat through for another minute.

  • Garnish with fresh cilantro.

  • Add fresh chili for extra spice.
