Enjoy Mexican cuisine at home with this fast Mexican chicken recipe! This dish is filled with delicious flavour and is a perfect lunch or dinner idea.

Ingredients to serve:

This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 450 g Hinode Steamed Brown Rice

  • 1 tbsp Oil

  • 1 lb Chicken Breast (diced)

  • 1 Green Pepper (diced)

  • 16 oz Salsa

  • 15 oz Can Red Kidney Beans (drained and rinsed)

  • Cilantro (garnish)

  • Sour Cream (to serve)

The nutritious bran layer of brown rice is not removed at milling, giving brown rice its nutty flavor and firmer texture.

Method

  • Heat oil in a large non-stick frying pan over a high heat. Add chicken and green pepper and cook, stirring frequently for 5 minutes.

  • Add salsa and kidney beans. Simmer 5 minutes, stirring occasionally until chicken is cooked through.

  • To cook the rice, simply massage the pouches to separate the grains and place in the microwave for the required time as indicated on the tray.

  • Serve chicken with rice, cilantro and sour cream.
