This recipe was originally designed for 2 people. Amended serving sizes for 1, 4, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 2 Hinode Long Grain Rice

  • 1 packet Spanish rice seasoning

  • 2 cup corn (fresh or frozen)

  • 1 oz can black beans

  • ¼ tsp Ground Cumin

  • ¼ tsp Ground Coriander

  • 4 Tostada Shells

  • ½ cup Cheese (grated)

  • 2 Tomatoes (sliced)

  • 1 Avacado (sliced)

  • 1 cup Cilantro (chopped)

  • Sriracha Sauce

  • Juice of 2 Limes

Method

  • Prepare rice per package instructions, adding Spanish rice seasoning packet to rice while cooking.

  • Heat corn, black beans, cumin and coriander on stovetop/microwave.

  • Warm tostada shells in pan – flipping until crisp.

  • Layer beans, corn, cheese, rice, tomatoes and avocado on shells.

  • Top with cilantro, hot sauce, lime juice and serve.
