Ingredients to serve:

This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 1½ cup Hinode Medium Grain Brown Rice

  • 3 cup Water

  • 1 tbsp Olive oil

  • 1 lb Ground pork

  • 1 tbsp Lemongrass (finely chopped )

  • 1 Red onion (finely shaved )

  • 2 tbsp Brown sugar

  • 1 cup Shredded coconut

  • 1 Lime juice

  • 30 ml Fish sauce

  • 2 tbsp Hoisin

  • Chopped peanuts, cilantro, basil and lettuce cups (to serve)

Method

  • Place the Hinode Medium Grain Brown Rice and water into a rice cooker and set to cook.

  • Once all the ingredients are prepped, heat a large wok over high heat.

  • Once hot, add the oil and the pork and use a wooden spatula to push the pork out to the edges and allow it to brown really well on one side.

  • Once golden underneath, add the lemon grass and onion to the top and then stir.

  • Cook for 5mins then add the brown sugar, coconut and cooked rice and mix well.

  • Pour in the lime juice, fish sauce and hoisin and continue to cook over high heat for 5mins stirring occasionally, until there are golden crispy bits and everything is combined.

  • Sprinkle with peanuts and serve immediately with fresh herbs and lettuce cups.

  • Hint: Adjust sweetness by adding more or less brown sugar to taste. Add chilli as desired.
