Ginger and Garlic Beef Stir-Fry

This recipe was originally designed for 2 people. Amended serving sizes for 1, 4, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 2 cup Hinode Rice (any variety) (uncooked)

  • 10 oz Beef Fillet (sliced thinly)

  • 1 tbsp Vegetable Oil

  • ½ Onion (sliced)

  • ½ Red Pepper (sliced)

  • 2 clove Garlic (crushed)

  • 2 tsp Fresh Ginger (grated)

  • 1 tsp Curry Powder

  • ⅓ cup Vegetable Stock

  • 1 cup Green Beans and Snow Peas (sliced)

  • Prepare Hinode rice per package instructions.

  • Heat oil in frying pan over high heat. Sauté beef until cooked to your liking. Remove and keep warm.

  • Add onion, red pepper, garlic, ginger and curry powder to the pan and gently cook for 2 minutes.

  • Add stock and green beans. Simmer until stock is reduced, about 4 minutes.

  • Add snow peas and cook for an additional 2 minutes.

  • Return beef to pan along with rice, stir all ingredients together and serve.
