Lamb Rice with Green Beans and Snow Peas

This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 4 cup Hinode Medium Grain Rice (Microwavable, White or Brown)

  • lb lamb (cut into strips)

  • 6 tbsp Vegetable Oil

  • 2 Medium Onion (sliced)

  • 8 tsp garlic (crushed)

  • 8 tsp Ginger (crushed)

  • 4 tsp Curry Powder

  • 8 oz Chicken Breasts

  • 8 oz Snow Peas

  • 4 cup Water

  • Salt and Pepper to Taste

Method

  • Prepare Hinode rice per package instructions.

  • Heat oil in a saucepan, add lamb and brown slightly.

  • Add onion, garlic, ginger and curry powder and cook for 2-3 minutes.

  • Pour in water.

  • Simmer until lamb is cooked to your liking (about 20 minutes) then add green beans and simmer until tender.

  • Then, add snow peas cook for an additional 2 minutes.

  • Stir in rice and serve.
