Lemon Rice Pilaf

This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 4 cup Hinode Basmati Rice (uncooked)

  • 4 tbsp Oil

  • 2 onion (chopped)

  • 2 tbsp Curry Powder

  • 6 cup Chicken Stock

  • 21 oz Prawns ((or 21.1 oz. unpeeled prawns), uncooked)

  • tbsp Lemon Juice

  • ⅔ cup Parsly or Dill (chopped)

  • 2 Rind of Lemon (optional)

Basmati

Basmati rice is renowned for its delightful aroma and long slender grains. When cooked, Basmati rice expands in length and produces a light, fluffy texture that is ideal for absorbing the flavours of your cooking. A drier rice, Basmati grains will remain separate, making it a staple of Indian cooking.

Method

  • Sauté 1 tablespoon of oil in saucepan with onion and curry powder for 1 minute over moderate heat.

  • Add rice and sauté for 2 minutes.

  • Add stock and bring to a boil. Reduce heat and simmer covered for 15 minutes.

  • Add prawns and simmer, cover for an additional 4 minutes.

  • Stir lemon juice, parsley and lemon zest (optional) through rice and stand, covered for 5 minutes before serving.
