Fragrant Basmati Rice

Basmati rice typically grows in Himalayan foothills. This extra long grain rice has a fluffy, light texture and a delicate, unmistakable flavor. The aroma of Basmati rice is enhanced with a  unique aging process. Literally translated from Hindi, "Basmati" means "queen of scents" or "pearl of scents."

Ingredients to serve:

This recipe was originally designed for 2 people. Amended serving sizes for 1, 4, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 1 chicken breasts (cubed)

  • 1 shallots (chopped)

  • 1 tbsp butter

  • ¼ cup sun-dried tomatoes in oil (chopped - save 1 tsp oil)

  • ½ cup basmati rice

  • 1 cup low-sodium chicken broth

  • ¾ cup spinach

  • ½ cup heavy cream

  • Salt, pepper, garlic powder, paprika (to taste)

  • 1 tsp dried Italian herbs

  • parmesan + chives (to finish)

When cooked, Basmati rice expands in length and produces a light, fluffy texture that is ideal for absorbing the flavours of your cooking. A drier rice, Basmati grains will remain separate, making it a staple of Indian cooking.

Method

  • Heat a large pan over medium. Add 1 tbsp butter + 1 tsp tomato oil. Sear the chicken with garlic powder, paprika, salt, and pepper for 5–6 mins until golden. Remove and set aside.

  • Melt the remaining butter, sauté shallots, then add in the sun-dried tomatoes and your rinsed rice. Toast until fragrant.

  • Add 2 cups broth, bring to a gentle simmer, cover, and cook for about 14 mins or until rice is tender. Use the remaining 1/4 cup broth if needed to loosen it up

  • Add in spinach and cream, cover for another minute, and adjust seasoning.

  • Return the chicken to the pan. Top with Parm, chives, and a drizzle of that tomato oil.
