Try this delicious and fluffy Mexican Rice from @jc.eeats, using Hinode Low GI White Rice. The perfect base for your next taco bowl.

Ingredients to serve:

This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 1 cup Hinode Low GI White Rice

  • 2 cup Water

  • 2 Roma Tomatoes

  • ¼ Onion

  • 2 Garlic Cloves

  • ½ tbsp Tomato Knorr

  • ½ tbsp Chicken Knorr

  • 1½ tbsp Oil

  • 2 Jalapeno

Method

  • Blend together Roma tomatoes, onion, garlic, and seasonings with water.​

  • Add oil to the pan and toast the Hinode Low GI White Rice on medium-low heat for 5-8 mins, or until it is lightly golden.​

  • Pour the tomato blend through a strainer and add water to the pan. Add one jalapeño on top and bring to a gentle boil. ​

  • Cover with a lid and cook on low heat for 20 minutes (do not open the lid at this time).​

  • Keeping the lid on, remove from heat and let it rest for 5 minutes.​

  • Fluff rice and enjoy with taco toppings.
