Mixed Bean Rice Salad

Ingredients to serve:

This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 2 cup uncooked Hinode rice

  • 2 can four bean mix (drained)

  • 2 cup Green Beans (cooked)

  • 2 Yellow Onion (sliced)

  • 1 bunch Italian parsley (chopped)

  • 2 bunch Cherry Tomatoes (halved)

  • 8 tbsp Extra Virgin Olive Oil

  • 4 tbsp white wine vinegar

  • 2 tsp whole grain mustard

  • 1 cup feta cheese

  • Salt and Pepper to Taste

  • Prepare Hinode rice per package instructions.

  • Place all ingredients in a large bowl and mix together gently.

  • Salt and peper to taste and serve.
