One Pot Chicken and Chorizo Jambalaya

Ingredients to serve:

This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 8 cup Hinode Medium Grain White or Brown Rice (white or brown, cooked)

  • 2 Onion, Diced (diced)

  • 1 lb Chicken (sliced, approx. 1 breast)

  • 2 thyme (sliced)

  • 2 Red Bell Pepper (diced)

  • ½ tsp Cayenne Pepper

  • 4 tsp Paprika

  • 2 oz can Chopped Tomatoes

  • 1 cup Chicken Stock or Water

  • 2 small bunch Cilantro (chopped)

  • 2 Chorizo Sausages (Sliced)

Method

  • Prepare Hinode medium grain rice per package instructions.

  • Fry the onion, chicken and sausage for 1 minute or until brown.

  • Add the rice, red bell pepper, cayenne, paprika, tomatoes, and stock. Cook for another 8 minutes.

  • Fold through cilantro and serve.
