Satay Vegetable Kebabs

Ingredients to serve:

This recipe was originally designed for 2 people. Amended serving sizes for 1, 4, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 2 cup Hinode Rice (any variety) (any variety)

  • 4 Wooden Skewers

  • 1 package Firm Tofu (cut into cubes)

  • 1 Zucchini (cut into chunks)

  • 10 Cherry Tomatoes (sliced)

  • 10 Button Mushrooms

  • ½ Red Bell Pepper (cut into chunks)

  • ¼ Pineapple (cut into chunks)

  • 8 oz Satay Sauce

Method

  • Prepare Hinode rice per package instructions.

  • Thread the tofu, zucchini, tomatoes, mushrooms, red bell pepper and pineapple chunks onto skewers.

  • Arrange onto a baking or grilling tray lined with foil and spray with a little olive oil.

  • Grill until cooked to your liking; turning the kebabs over half way through cooking.

  • Heat satay sauce in sauce pan or microwave.

  • Arrange the kebabs over a bed of rice.

  • Top with satay sauce and serve.
