2 cup Hinode Rice (any variety) (any variety)
4 Wooden Skewers
1 package Firm Tofu (cut into cubes)
1 Zucchini (cut into chunks)
10 Cherry Tomatoes (sliced)
10 Button Mushrooms
½ Red Bell Pepper (cut into chunks)
¼ Pineapple (cut into chunks)
8 oz Satay Sauce
Prepare Hinode rice per package instructions.
Thread the tofu, zucchini, tomatoes, mushrooms, red bell pepper and pineapple chunks onto skewers.
Arrange onto a baking or grilling tray lined with foil and spray with a little olive oil.
Grill until cooked to your liking; turning the kebabs over half way through cooking.
Heat satay sauce in sauce pan or microwave.
Arrange the kebabs over a bed of rice.
Top with satay sauce and serve.
