This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 4 cup Hinode Medium Grain Rice (Microwavable, White or Brown)

  • 2 tbsp Oil

  • 4 lb Chicken (sliced)

  • cup Chicken Broth

  • 2 cup spaghetti sauce

  • 2 Green Bell Pepper (sliced)

  • 2 cup Peas

  • 1 cup pitted black olives

  • ½ cup Parmesan cheese

Method

  • Heat oil in frying pan over medium-high heat and cook chicken until lightly browned.

  • Add rice, stock and spaghetti sauce; bring to a boil. Reduce heat, cover and simmer 15 minutes, until moisture is absorbed.

  • Add remaining ingredients (except parmesan cheese) and simmer another 5 minutes.

  • Sprinkle with parmesan cheese and serve.
