Spiced Pork and Rice Lettuce Cups

This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 8 cup Hinode Brown Rice (any variety)

  • 2 lb pork (minced)

  • 4 tbsp Vegetable Oil

  • 2 tbsp Sesame Oil

  • 4 clove Garlic (finely chopped)

  • 4 tbsp Fresh Ginger (grated)

  • 1 Red Chili Pepper (seeded and sliced)

  • 2 cup Green Onions (sliced)

  • 8 tbsp Soy Sauce

  • 16 iceburg lettuce leaves (cup shaped, washed)

Brown Rice

Retaining all the goodness of Mother Nature, the nutritious bran layer of brown rice is not removed at milling, giving brown rice its nutty flavour and firmer texture.

Method

  • Prepare Hinode rice per package instructions.

  • Heat oil in non stick pan.

  • Add ginger, garlic and chili, fry for 1 minute.

  • Add minced pork and stir fry until cooked.

  • Add 4 cups cooked rice and stir fry until rice is hot.

  • Add soy sauce and green onions and heat for an additional 2 minutes.

  • Fill mixture into lettuce cups and serve.
