Spicy Brown Rice and Beans

Ingredients to serve:

This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 4 cup Hinode Brown Rice (cooked, any variety)

  • 4 tbsp olive oil

  • 4 clove garlic (minced)

  • ½ cup Yellow Onion (diced)

  • 2 oz can Black Beans (drained)

  • 1 cup Corn

  • 2 Tomato (diced)

  • 2 Jalapeño Pepper (chopped)

  • 2 tsp Salt

  • Black Pepper (to taste)

Method

  • Sauté oil, garlic and onion until translucent.

  • Add drained black beans, corn, tomato, jalapeno and cooked rice and sauté for additional 5 minutes.

  • Add salt and pepper to taste and serve.
