This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 4 cup Hinode White Rice (uncooked, any variety)

  • 1⅓ cup Coconut Milk

  • 8 Mahi Mahi Steaks (1" thick)

  • 2 Pineapple (grilled)

  • 4 cup Edamame (shelled)

  • 2 cup shitake mushrooms (sliced)

  • ½ cup Green Onions (diced, greens only)

  • 2 tbsp olive oil

  • Teriyaki Sauce

Method

  • Cook rice per package instructions, substituting 2/3 cup of water with coconut milk.

  • Separately marinate the mahi-mahi and vegetables in teriyaki sauce.

  • Grill fish and pineapple to your liking.

  • Sauté remaining vegetables in teriyaki sauce on high until tender.

  • Serve fish and vegetables on top of rice and garnish with green onions.
