4 cup Hinode White Rice (uncooked, any variety)
1⅓ cup Coconut Milk
8 Mahi Mahi Steaks (1" thick)
2 Pineapple (grilled)
4 cup Edamame (shelled)
2 cup shitake mushrooms (sliced)
½ cup Green Onions (diced, greens only)
2 tbsp olive oil
Teriyaki Sauce

Cook rice per package instructions, substituting 2/3 cup of water with coconut milk.
Separately marinate the mahi-mahi and vegetables in teriyaki sauce.
Grill fish and pineapple to your liking.
Sauté remaining vegetables in teriyaki sauce on high until tender.
Serve fish and vegetables on top of rice and garnish with green onions.
