Thai Chicken and Green Rice

This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 8 cup Hinode Brown Rice (cooked, any variety)

  • 4 tbsp olive oil

  • ½ cup Green Onions (chopped)

  • 6 clove garlic (minced)

  • 2 tbsp Ginger (fresh, minced)

  • 2 cup Cilantro Leaves (chopped)

  • 1 cup Thai Basil (chopped)

Brown Rice

Retaining all the goodness of Mother Nature, the nutritious bran layer of brown rice is not removed at milling, giving brown rice its nutty flavour and firmer texture.

Method

  • Heat rice.

  • Combine olive oil, honey, hot mustard, cumin, lime juice and garlic salt - coat chicken with mixture.

  • Grill chicken until fully cooked.

  • Sauté olive oil, green onions, garlic and ginger until translucent.

  • Add cilantro, basil and heated rice and sauté until mixed through.

  • Plate rice with chicken and serve.
