Enjoy Thai cuisine at home with delicious Thai green curry with chicken! This simple dish is packed with flavour and is ready to eat in just 20 minutes.

Ingredients to serve:

This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 1⅓ cup Hinode Jasmine Rice

  • 1 Onion (sliced)

  • ½ lb Skinless Chicken Breast (sliced)

  • 1 Green Pepper (sliced)

  • 1½ tbsp Thai Green Curry Paste

  • 13½ oz Light Coconut Milk

  • 8 oz Chicken Stock

  • 100 g Snow Peas (topped and tailed)

  • 1 bunch Cilantro (chopped)


Jasmine rice is a fragrant long grain varietal that is perfect in southeast Asian style dishes. This grain will be slightly sticky but still fluffy. Its separating qualities and natural fragrance compliment many spices, making it a great choice for a wide variety of fried rice, stir fries and curry recipes.

  • To cook the white rice, in a saucepan, add 1 cup of rice to 2 cups of cold water and bring to a boil. Reduce heat and simmer, covered for 25 minutes. Remove from heat and stand, covered for 5 minutes. If you are not sure how, we have a helpful “How to Cook rice section” to make you a pro. If you would like to use a brown rice in this recipe, simply add an additional ½ a cup of water. Tip: For a convenient alternative, we have a range of microwave rice. Ready to eat in 2 minutes!

  • Sauté the onion and chicken in a hot pan for 2 minutes until browned.

  • Add green pepper, curry paste, coconut milk and chicken stock.

  • Cook for another 2 minutes to heat through.

  • Add the snow peas and cilantro and cook for another minute.

  • Serve the curry over cooked Hinode Jasmine Rice.
