2 lb cooked peeled prawns
1 cup peas (fresh or frozen)
2 cucumber (cut into half and sliced)
2 Red Onion (sliced)
2 carton Cherry Tomatoes
½ bunch fresh mint (roughly chopped)
½ bunch Fresh Cilantro (chopped)

Cook Hinode rice per package instructions. Let cool.
In a small bowl, mix together all dressing ingredients.
In a large bowl, combine all other ingredients.
