Tuna Rice Tabouli

Ingredients to serve:

This recipe was originally designed for 2 people. Amended serving sizes for 1, 4, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 2 cup uncooked Hinode White Enriched Extra Long Grain, Jasmine, or Basmati rice

  • 1 can tuna in oil

  • 1 small bunch Parsley (chopped)

  • 1 small bunch Mint (chopped)

  • ½ Yellow Bell Pepper (diced)

  • Juice and zest of 1 lemon

Method

  • Prepare Hinode white rice per package instructions.

  • Combine cooked rice with tuna, parsley, mint, bell pepper and lemon juice in a bowl.

  • Spoon into serving dishes and sprinkle with lemon zest.
