2 cup uncooked Hinode White Enriched Extra Long Grain, Jasmine, or Basmati rice
1 can tuna in oil
1 small bunch Parsley (chopped)
1 small bunch Mint (chopped)
½ Yellow Bell Pepper (diced)
Juice and zest of 1 lemon
Prepare Hinode white rice per package instructions.
Combine cooked rice with tuna, parsley, mint, bell pepper and lemon juice in a bowl.
Spoon into serving dishes and sprinkle with lemon zest.
