White & Wild Rice with Cranberries and Caramelized Onions

Ingredients to serve:

This recipe was originally designed for 6 people. Amended serving sizes for 1, 2, 4, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 6 cup chicken broth

  • 1½ cup Hinode Long Grain Rice (Jasmine, White or Brown)

  • 1½ cup Hinode White & Wild blend or long grain rice

  • 9 tbsp Butter or Margarine

  • 9 Medium Onion (sliced in thin wedges)

  • 3 cup Dried Cranberries (sweetened and dried)

  • 1½ tsp Orange Zest (finely grated)

Method

  • Sauté butter in skillet on medium heat with onion until translucent.

  • Add brown sugar, cranberries and orange zest and rice; saute for 5 more minutes.

  • Pour in chicken broth bring to a boil, then cover with a tight fitting lid and turn down to low simmer for 30 minutes or until all moisture is absorbed.

  • Fluff with a fork and serve.
