Ingredients
1 Onionfinely chopped
2tbsp Curry paste
1can (14.5 oz) Diced Tomatoes
1 1/2cups vegetable broth
1head Broccolimedium size, cut into florets
1can (16 oz) garbanzo beansdrained and rinsed
1/2bunch Cilantrochopped
1/2cup Plain Yogurt

Instructions
  1. Prepare Hinode rice per package instructions.
  2. Heat oil over medium heat in a sauce pan. Add onion and cook gently until opaque.
  3. Add curry paste; stir while cooking for 2 minutes.
  4. Add tomatoes and broth; simmer for 5 minutes.
  5. Add broccoli and garbanzo beans; simmer until broccoli is just cooked.
  6. Season with salt and pepper.
  7. Mix together cilantro and yogurt in a bowl.
  8. Serve curry with yogurt mixture over rice.
