2cups Hinode White Riceuncooked, Jasmine, Basmati, or Long Grain
2 White Onionsliced
2lbs Chickensliced
3 1/2cups Coconut Milk
2cups Snow Peas
2cups egg plantdiced
1small bunch Cilantrochopped
Chili Pastefor additional spice

Instructions
  1. Prepare rice per package instructions.
  2. Sauté onion and chicken in large pan until cooked thoroughly.
  3. Add bell pepper, curry paste, coconut milk and stock - simmer for 10 minutes.
  4. Add snow peas, eggplant and cilantro and cook until tender.
  5. Serve curry on top of rice.
